Taiwanese Beef Noodle Soup (The Woks of Life)

We make this recipe a lot. it's always really delicious. Noting down our updated recipe below for our quick reference.
The main change is that we make a double batch with the same amount of meat.

- Beef shank (3 lbs) (cut into 2-inch chunks)
- Ginger (3-inch piece) (smashed)
- Garlic (9 cloves) (smashed)
- Scallions (6) (cut into 2-inch segments)
- Onion (2) (cut into wedges)
- Tomato (4) (cut into wedges)
- Dried chilies
- Tomato paste (1 1/2 tbsp)
- Spicy bean paste / douban jiang (3 tbsp)
- Sugar (2-3 tsp)
- Soy sauce (3/4 cup)
- Shaoxing wine (3/4 cup)
- Water (12 cup)
- "Chinese aromatic herb packet", 卤料包

1. Blanch beef -- boil a large pot of water, put the beef in, bring back to boil. boil for a minute. strain and rinse.

2. Saute -- using oil, saute ginger (3-inch piece), garlic (9 cloves), scallions (6), and onions (2). stir to lightly caramelize, let onion turn translucent.

3. Add -- tomatoes, dried chilies, douban jiang (3 tbsp), sugar (2-3 tsp), soy sauce (3/4 cup), shaoxing wine (3/4 cup).

4. Mix, then add water (12 cups) and spice pack (卤料包)

5. Simmer for 3-4 hours

Done.

Additional instructions for serving!

- Cook noodles  (wheat)
- Cook bok choy  (1 small handful / serving)
- Serve with minced cilantro, scallions, and pickled mustard greens.
